Seafood ink rice is the most intense and deep version of seafood paella. Squid ink turns the bomba rice black and gives it a concentrated marine flavour unlike anything else — dark on the outside, complex within.

At Kokcha it is made with the same base as our seafood paella — a sofrito of green and red peppers in extra virgin olive oil, seafood broth — but with peeled shrimp, mussels, prawns, squid and their ink, which transforms the rice into something truly special.
